The driving force behind Finca Tungasuk is an inspiring couple, Annabelle and Alfredo. Their story to creating this 32-acre paradise is awe inspiring. Neither had farming experience, nor experience in Cuba. Yet the self-proclaimed foodie from Peru – Alfredo – and the Ferrandi Culinary Institute trained chef from Nicaragua – Annabelle – were brought together by their nostalgia of the countryside, in Cuba to create magic.

Their dream was to create a self-sustaining farm that nourishes body, mind and soul. Their vision was to build a farm that embodies the principles of permaculture, conservation, and community engagement. Together, they have created a sanctuary that welcomes visitors from all over the world to learn, share, and grow.

What You Will Find at Finca Tungasuk

Sustainable Agriculture

At the heart of Finca Tungasuk, sustainability is more than just a principle—it’s a way of life for Alfredo and Annabelle. Their entire endeavor revolves around the “pursuit of a sustainable way of living.” But this seamless, self-sufficient lifestyle hasn’t always been easy to achieve. The path to their current success was riddled with challenges.

Remarkably, Alfredo and Annabelle began their farming venture with almost no prior knowledge of agriculture. This fact is both a source of amusement and admiration among those who know their story. Initially, they depended on books, internet searches, and the invaluable wisdom of seasoned local farmers who had cultivated the land for generations. Despite the initial incredulity from the locals, the guidance they provided was indispensable. Alfredo fondly recalls their teachings:

“They taught us about the moon’s phases, cold fronts, and fallow periods.”
For two foreigners to undertake such an ambitious project in rural Cuba with no prior experience was no small feat. Their relentless perseverance finally began to yield results, and they slowly adapted to their new environment.

Today, Alfredo and Annabelle are integral members of their community, contributing to the sustainable lifestyle they initially set out to achieve. They have nurtured a symbiotic relationship with their neighbors, forming a localized economy based entirely on the barter system. Annabelle and Alfredo now trade cheeses for broccoli, turkeys for beans, and tomatoes for fresh mushrooms.

Their commitment to sustainability extends beyond farming practices. They have chosen to live without personal vehicles, relying instead on their neighbors for transportation to Havana when necessary. This small but significant choice underscores their dedication to an environmentally friendly lifestyle.

Cooking classes

Annabelle’s culinary expertise has turned Finca Tungasuk into a renowned dining destination celebrated for its inventive and eclectic cuisine.

The menu is a delightful fusion of cultures, featuring not just traditional Cuban flavors but also unique dishes like oyster mushrooms, homemade passata, and a variety of Latin American beans. Drawing on her extensive experience from Paris, Annabelle crafts dishes that are both creative and original, utilizing non-native ingredients such as Nicaraguan cabbages, homemade pineapple vinegar, coriander, sautéed bok-choi, yucca in “mojo” sauce, red snapper, and “queso casero” (homemade cheese).

But don’t worry, you’ll still get a taste of Cuba’s rich agricultural heritage. Indulge in often overlooked local fruits like guanabana, caimito, rollinia, annona, and mamey colorado, which the farm is dedicated to reintroducing to the mainstream culinary scene.

Volunteer Opportunities

If you’re passionate about sustainable farming and want to give back, consider volunteering at Finca Tungasuk. The farm welcomes volunteers who are eager to learn and contribute to the daily operations. 

Upon arrival to the farm, you will be greeted with some fresh yoghurt, fruit and coffee all produced on the farm. After meeting the family and your co-workers, you will be asked to assist in the daily activities. These differ in each season, but can be anything from harvesting to pruning or weeding. Of course, during your time on the farm you will also learn about the sustainable farming practices utilised to create the delicious fruit and vegetables here.

Before you know it, it is time to break for lunch and enjoy some of the delicious produce from the land. It’s a rewarding experience that allows you to gain hands-on knowledge while making a positive impact.

Brunch or Lunch

Don’t feel like getting your hands dirty? No problems, you can still enjoy the delicious, organic produce at Finca Tungasuk through a dining experience.

To ensure an authentic dining experience, guests are required to make reservations two days in advance. What awaits you is a “farm to table” four-course meal including an aperitif, starter, main course, and dessert accompanied by Cuban coffee.
